Resep Cumi Saus Tiram (untuk 4 porsi)

Bahan marinasi:
500 gr cumi
1 sdt baking powder
1 sdm kecap inggris
1 sdt garam
¼ sdt merica
1 sdm maizena

Bahan saus:
3 sdm saus tiram
1 sdm kecap manis
1 sdm kecap inggris
1 sdm kecap ikan
2 sdt gula pasir
½ sdt kaldu ayam bubuk
2 sdm maizena
300 ml air
1 sdt minyak wijen

Bahan lainnya:
½ buah bawang bombai ukuran kecil
5 siung bawang merah
5 siung bawang putih
2 buah cabai merah
1 batang daun bawang
4 cm jahe
1 sdm margarin

Cara membuat:
1. Potong-potong cumi, belah dua bagian kepala dan buang bagian mata
2. Marinasi dengan garam, merica, kecap inggris, baking powder dan maizena, aduk rata. Diamkan minimal 15 menit
3. Cincang bawang putih, bawang merah, iris tebal bawang bombai, iris miring cabai merah, daun bawang dan jahe
4. Campurkan air, saus tiram, kecap inggris, kecap ikan, kecap manis, kaldu ayam bubuk, gula dan maizena, aduk rata
5. Panaskan minyak, goreng cumi beberapa saat, tiriskan dan sisihkan sebagian minyak
6. Tumis bawang putih, bawang merah dan jahe hingga wangi kemudian masukkan margarin, tumis sesaat
7. Masukkan bawang bombai dan cabai merah, tumis hingga wangi
8. Masukkan larutan saus, masak hingga mendidih kemudian masukkan cumi, daun bawang dan minyak wijen, aduk rata
9. Cumi saus tiram siap disajikan

Squid in Oyster Sauce Recipe (yield 4 servings)

Marinating ingredients:
500 g squid
1 tsp baking powder
1 tbsp Worcestershire sauce
1 tsp salt
¼ tsp pepper
1 tbsp cornstarch

Sauce ingredients:
3 tbsp oyster sauce
1 tbsp sweet soy sauce
1 tbsp Worcestershire sauce
1 tbsp fish sauce
2 tsp sugar
½ tsp chicken powder
2 tbsp cornstarch
300 ml water
1 tsp sesame oil

Other ingredients:
½ pc onion, small
5 pc shallots
5 clove garlic
2 pc red chili
1 pc green onion
4 cm ginger
1 tbsp margarine

Steps:
1. Cut the squid into pieces, halve the head and remove the eyes.
2. Marinate with salt, pepper, Worcestershire sauce, baking powder, and cornstarch. Mix well. Let it sit for at least 15 minutes.
3. Chop the garlic and shallots. Slice the onion into thick pieces. Slice the red chili diagonally. Slice the green onions and ginger.
4. Mix water, oyster sauce, Worcestershire sauce, fish sauce, sweet soy sauce, chicken powder, sugar, and cornstarch. Mix well.
5. Heat the oil. Fry the squid briefly. Remove and set aside some of the oil.
6. Sauté garlic, shallots, and ginger until fragrant, then add margarine. Cook briefly.
7. Add onion and red chili. Sauté until fragrant.
8. Add the sauce mixture. Bring to a boil, then add the squid, green onions, and sesame oil. Stir well.
9. Squid in Oyster Sauce is ready to be served.
