Brown Butter Banana Bundt Cake (Gluten-Free, Honey Sweetened)

Ingredients
For the cake:
* ½ cup (115g) unsalted butter
* 1½ cups (210g) gluten-free all-purpose flour
* 1 tsp baking soda
* ½ tsp baking powder
* ½ tsp salt
* 1 tsp cinnamon (optional)
* 3 large ripe bananas, mashed (about 1½ cups)
* ¾ cup (180ml) honey or pure maple syrup
* 2 large eggs, room temp
* 1 tsp vanilla extract
* ¼ cup (60g) Greek yogurt
For the honey glaze:
* 4 tbsp honey
* 2 tbsp unsalted butter, melted
* ½ tsp vanilla extract (optional)

Instructions
1. Brown the butter:
* Melt butter over medium heat in a saucepan. Cook, swirling often, until golden brown and nutty smelling. Remove from heat and cool slightly.
2. Prep the pan:
* Preheat oven to 175°C (350°F). Grease a 10-cup bundt pan well and lightly dust with gluten-free or almond flour.
3. Mix dry ingredients:
* Whisk flour, baking soda, baking powder, salt, and cinnamon in a bowl.
4. Mix wet ingredients:
* Mash bananas in a large bowl. Whisk in honey or maple syrup, eggs, vanilla, and Greek yogurt. Stir in cooled brown butter.
5. Combine:
* Fold dry ingredients into wet until just combined.
6. Bake:
* Pour batter into prepared pan and smooth top. Bake for 40–50 minutes or until a toothpick inserted comes out clean.
7. Cool:
* Let cake cool in pan for 15–20 minutes, then invert onto wire rack to cool until just warm (not hot).
8. Glaze:
* Mix honey, melted butter, and vanilla until smooth.
* Drizzle generously over the cake.
