Perfect for breakfast or a snacky snack!
— INGREDIENTS —
— Store bought scallion pancakes (I used Mei brand)
— 1 egg per pancake
— Thinly sliced scallions
— Salt & Pepper to taste
— Choice of oil
— Chinese Sausages (optional)
Optional sauces to pair with:
— Seasoning sauce or soy sauce (I used knorr)
— Chili crisp / oil
— INSTRUCTIONS —
1. Thinly slice fresh scallions.
2. No need to defrost pancake prior. Heat pan on medium heat, drizzle oil and put a pancake to fry for 3-4 mins.
3. Flip then add an egg to scramble directly on top, add scallions and/or sausages, then cover with a lid and let it cook for another 3-4 mins.
4. Enjoy with seasoning sauce and/or chili crisp/ oil!
