Recipe:
What you need: scallions/green onions FINELY chopped (dry them the best you can after chopping), dumpling wrappers (no egg), kosher salt, neutral oil.
π₯Set up work station: dumpling wrappers (covered with moist kitchen towel to prevent them from drying out) chopped scallions, oil, kosher salt, & thin spatula, & a rolling pin (or use a narrow wine bottle)
π₯Take one wrapper, brush/coat wrapper with oil, sprinkle with salt, add scallions, add another wrapper, push down to seal & roll out from the middle out in a clockwise fashion (careful not to tear wrapper), gently flip pancake with spatula, repeat process using a total of 6-8 dumpling wrappers ( I used 6)
π₯In a non stick pan, with oil coating pan, over low/med heat cook till it starts to smell good & becomes golden & crisp. I flipped my pancakes after 4-5 min then, 3-4 min on the other side. Slice or serve whole.
π₯Serve with your favorite dipping sauce. Pancakes are also freezer friendly. Place in freezer safe container, & cook them at a later time.
