Dough:
- 2 cups all-purpose flour (300g)
- Pinch of salt
- 1/2 cup boiling water
- 1/4 cup warm water (add slowly if needed)
Filling:
- 1 tsp sesame oil (heated)
- 1/2 cup neutral oil (heated)
- 1/4 cup flour
- 1/2 tsp 5 spice
- Dash of salt and white pepper
- 1 cup finely chopped scallions
1. Mix flour and salt in a bowl. Gradually add boiling water, stirring with chopsticks/fork until absorbed. Add cool water gradually until dough forms flakes. Knead into a firm ball (5 mins), cover, and rest for 30 mins.
2. For filling, mix flour, salt, and spices in a bowl. Add hot oil and stir into a paste.
3. After resting, knead dough (1 min), divide into 6 pieces, and form into balls. Roll each ball into a 6x10” rectangle. Spread 1 tbsp filling and sprinkle scallions in an L shape. Roll up, seal, and form into a round disk.
4. Roll each disk into a 7-8” circle. For storage, place between parchment paper, store in a ziplock bag, and freeze (up to 3 months).
5. To cook, heat oil in a pan over medium-high, add pancake, cover and cook each side for 1 min. Uncover, press for even browning, and cook until crisp (about 3 mins). Cut into pieces and serve hot.
