All butter loaf cake:
Makes 2-8”x4” loaves
2 sticks(or 1 cup) salted butter
1/4 cup vegetable oil
1 1/4 cup granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
3/4 cup whole milk
2 1/4 cups all purpose flour
1/4 cup coconut flour
1 1/2 tsp baking powder
Bake 350° F for 35-45 minutes
Apricot Glaze:
1 tablespoon apricot preserves
1 teaspoon water
Heat in a microwave safe bowl for 10-30 seconds until bubbly.
