Description
For the Pancakes:▪️2 Cups All Purpose Flour▪️1/2 tsp Salt▪️1 Cup Boiling Water▪️4 Scallions, sliced thin▪️Sesame Oil▪️1/4 Cup Vegetable Oil▪️

For the Sauce:▪️1/4 Cup Soy Sauce▪️2 Tbsp Rice Vinegar▪️4 tsp Sesame Oil▪️1 tsp Sesame Seeds▪️2 tsp Scallion, diced small▪️Chili Garlic Sauce or Chili Oil (optional)▪️

1️⃣ Mix together the flour and salt in a large bowl and then add 3/4 cup boiling water; mix with chopsticks or a spoon to start and then switch over to mixing your hands and continue adding water a Tbsp at a time until a dough forms; transfer to a floured surface and knead for 2-3 more mins then transfer to a bowl, cover with plastic wrap and let rest 30 mins (or over night in the fridge); while the dough is resting mix together the ingredients for the sauce
2️⃣ Divide dough into four equal pieces; roll the first piece of dough into an 8” round and then brush on a thin layer of sesame oil; roll it into a log / jelly roll shape and then twist it into a spiral tucking the end underneath; re-roll into an 8” round
3️⃣ Brush on another layer of sesame oil and add a thin layer of scallions; roll up into a log and then twist into a jelly roll and roll into a 7” round; repeat with the remaining pieces of dough
4️⃣ Heat oil in a skillet until shimmering; cook the pancakes while shaking the pan gently for ~2 minutes per side until golden brown; place on a paper towel lined plate to remove excess oil; cut the pancakes into 6 pieces each, sprinkle with salt, and enjoy with dipping sauce
