Description
Moist and fluffy banana bread recipe. Not too sweet, full of banana flavour, and very easy to make. Customize it by adding in chocolate chips, nuts, or other spices.
Ingredients:
- 3 ripe bananas
- 1/2 cup unsalted butter (semi-melted)
- 2 large eggs
- 1/4 cup sour cream (I used low fat)
- 1 tsp vanilla extract
- 1/4 cup granulated sugar
- 1/3 cup brown sugar
- 1 1/2 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon powder
- 1/2 teaspoon ground nutmeg
Instructions
- Grease the loaf pan and line with parchment paper
- Combine all dry ingredients in a bowl, whisk together
- Melt butter in short spurts in the microwave. Do not fully melt it, it should look like mine in the video. This method avoids curdling when adding eggs and other liquids.
- Beat butter and sugar. Add eggs one at a time. Add vanilla extract.
- Mash bananas in a separate bowl
- Add half of the dry ingredients, sour cream, and half the banana mixture. Mix gently. Add the rest, and fold with spatula to finish off. Do not overmix!
Bake at 350F for 45 minutes.
Notes:
- Please follow the butter melting method to avoid curdling.
- Eggs and sour cream can be cold out of the fridge, it doesn't affect this recipe.
- You can omit the spices. I added 2 tsp of cinnamon powder because... who doesn't love cinnamon!
- Do not overmix after adding the second half of the flour and banana mix. Use spatula.
