Thick Potato Noodles
Ingredients:
For noodles:
- 350 grams potatoes (~2 potatoes)
- 2 cups potato starch
- 3/4 cup water (room temperature)
For sauce:
- 1/2 cup soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoon gochujang
- 1 tablespoon gochugaru
- 1/2 tablespoon sesame oil
- Green onions and roasted sesame seeds for garnishing (optional)
1. Begin by peeling and dicing your potatoes.
2. Submerge the potatoes in water in a large pot with water and bring to a boil, cooking the potatoes until tender (~25 minutes).
3. Strain the water. In a large bowl, mash the potatoes as finely as possible with a fork.
4. Add the potato starch and water and knead for about 5 minutes or until a dough forms.
5. Divide the dough into 12 and roll each into a long noodle.
6. In a large pot, bring water to a boil, and gently add the noodles in (only a few at a time, to avoid sticking to each other). Cook until the noodles float.
7. Strain the noodles when done and coat in sauce.
